I have a confession! No matter how long I've been baking cakes I still can't figure out servings and sizes. Maybe it's because scratch cakes don't always turn out the same each and every time or perhaps it's because I failed statistics, twice! I haven't been able to figure it out, the problem could merely be that I love cake. So when a 9" cake is sliced in eight pieces, as we serve in the bakery, I'm all in. Our customer's love those big slices of deliciousness and my Grandson calls them "Grandma Slice". Realistically, when serving  cake for a function more practical sizes are cut and served (unless you've invited me). There are multiple ways to cut a cake to get the most slices, the below photo is an example (Wilton) of how to cut a standard round cake into multiple servings.  This is one of my favorite methods when entertaining, the sizes are just right and the presentation is neat and clean. Of course this is just one of the many methods you'll find, examples and instructions are everywhere on the internet so it's just a matter of what works for you.

I don't know if your anything like me but whatever help I can get to make life a little easier, I'm all in. Truly, who couldn't use a helping hand around the house from time to time.  Today I'd like to share with you a few secrets and helpful suggestions; from baking tips, simple cleaning, pet care and food hints to help make your everyday life just a little easier. Lets get started!

 

1.) Burn a candle close by when peeling or cutting onions, this stops the tears from flowing.

 

2.) Stop tomato based or other stains by rubbing the inside of plastic containers with vegetable

oil before placing food inside.

 

3.) WD-40 will remove sticky labels, just spray a little on the label, leave it on for a few minutes and the label will slide off.

 

4.) Remove bad oven odors left by oven cleaners by baking orange peels in the oven for a few minutes.

 

5.) Hard to clean pan? Put 1/2 cup baking soda in pan and fill with 1/2 cup water, boil until burnt particles float to the top.

 

6.) To keep cat liter smelling fresh, mix baby powder in with it. (Check with your vet)

 

7.) Problem with your pet scratching furniture? Place an orange or lemon peel around or rub the peel on to the surfaces of the area, cats and dogs do not like the smells of citrus.

 

8.) To get ink stains out of clothes, rub stain with a cotton ball soaked in eau de cologne.

 

9.) Turn plain flour into self-rising flour by adding 2 teaspoons of baking powder to each cup of flour.

 

10.) To keep herbs fresh longer, place stems in a jar with a little water, cover with plastic bag and refrigerate.

​Today I wanted to talk to you about baking from scratch and the misconception given to customers when buying pastries. I don't know about you but every bakery I've ever visited claims they are "baking from scratch, with only the finest and freshest of ingredients" (hate to say it but that's a common lingo in this business). Now in many cases that is true, there are many bakeries who spend countless hours and money bringing you fresh baked goods and yes, made from scratch. But what is "baked from scratch"? Baking from scratch is a way of saying that you are using all natural ingredients without the aid of any product that is already prepared, it means using raw base ingredients instead of those that have been preassembled. Just because you've added real canola oil and eggs, does not a scratch cake make! Artificial ingredients are harmful to your health and are manufactured in labs, while baking with pure and natural ingredients gives you the option of eliminating ingesting basically poison in your body . See, who said you can't have your cake and eat it too. Ok, so now we've got it. If you are not using real flour, eggs, butter, milk, vanilla extract, etc., you are not baking from scratch. This is where some bakeries have consumer's fooled, and customer's buy it (literally) hook, line and sinker. The real question of the day is "How can you tell the difference?" If your a pastry chef or seasoned baker then you get a gold star, 9 out of 10 you know what I'm talking about. For the average consumer, we've got some learning to do and let me warn you it's not gonna be easy. The only way your going to tackle this riddle is to pay attention to some tale, tale signs. If you enter a bakery and there are numerous cakes in the cooler and they all look exactly like, they are processed cakes! I don't know one baker who can make multiple cakes from scratch and they all come out the exact way each and every time. If you enter a bakery and the coolers are filled to the brim with pastries and your being told they are fresh baked daily, don't fall for it. Baking from scratch is a time consuming endeavor and there is no way any bakery can fill up their showcases each and every day with products made that day. These pastries are most likely prepackaged or made from mixes. I'm going to back up and contradict myself for a moment here. Although what I just mentioned may be the case many bakeries that do bake from scratch also fresh freeze their pastries. Don't be afraid! Natural baked goods that have been frozen can remain that way for weeks and will be just as fresh and tasty when thawed. Frozen does not mean old! Another sign is the weight of a cake. A cake from scratch will have you visiting your chiropractor within a day of getting it home, while a made from box cake will prove to be lighter and easily transported with minimal effort. As for costs it can't be helped that a made from scratch cake is going to cost you considerably higher than a boxed version. Natural ingredients are expensive but if you want that quality and delicious flavor than the quality should outweigh the additional cost. 

 

Well, I guess that's about it, I know I've gotten a little long winded yet I hope this post has helped you a bit to understand the difference between the two types of baking and how easy it is to be fooled. ​With our f​ive-year anniv​ersary coming up I thought it was about time and long over due to start posting once again on our blog. With day to day or weekly posts I plan on keeping you updated on all the happenings at our bakery. For those of you who don’t know us, we are a family owned and operated pastry shop located in the Boynton Beach Mall (with a new location coming soon). At our quant and small café, you’ll be able to relax with a delicious cappuccino and indulge in fresh baked goods. From our laid-out breakfast bar featuring croissants, bagels and muffins to our fully stock individually sliced cakes, we’ve got something for everyone. Our staff is amazing, did I mention that! We invite you to come in for a quick visit, we guarantee you’ll be back for more. Just a note, we are located right outside JC Penney in the mall.
